After experiencing food from many parts of the world, the owner brought one of his favorites to the mountain. Neapolitan wood-fired pizza. Neapolitan pizza is about simplicity. The pizzas start with four simple ingredients, flour imported from Naples Italy, salt, water, and yeast. Then it’s all about time!

After the mixing process, it takes the dough approximately 32 hours to develop. Once the fermentation process is complete, the dough is formed into pizzas using the Italian slap method. After topping the pizzas with quality ingredients, preferably three toppings or less, they cook in about 90 seconds in a wood fired oven. The internal temperature of the oven is around 1000 degrees. The process yields a slightly charred pie with subtle flavors of the toppings distinguishable in every bite.
